These piquillo peppers are produced in Navarra, Spain by La Catedral -- a small producer that stills uses traditional methods, and is known throughout Spain for their exceptional quality. Harvested at their peak of ripeness, the peppers are fire-roasted over oak wood, then pealed by hand and packed in small glass jars.
