Garnatxa vinegar by Romanico
This vinegar is produced in the region of Priorat in Catalunya, Spain. It exclusively uses the red grapes of the Garnacha variety and it is aged in oak barrels for more than 7 years. The Garnacha grape ripens late, so it needs hot, dry conditions such as those found in northeastern Spain and in the south of France.
Intense and slightly acidic it is exquisite in dressings, vinaigrettes and carpaccio. The flavor profile of this vinegar is reminiscent of old wines of the Priorat region.
